Super Simple Blueberry Tarts


I made these blueberry tarts for Link's party and seriously they are so easy it's almost like cheating! With the sweet, fresh blueberries combined with rich white chocolate ganache they are absolutely delicious too.

Super Simple Blueberry Tarts

 - 3 punnets of blueberries
 - 12 premade tart cases
 - 1/3 cup of cream
 - 150g of white chocolate

Break chocolate up into pieces and place in a heat proof bowl with the cream. Place the bowl over a saucepan of simmering water (making sure the water doesn't touch the base of the bowl). Stir until the chocolate has melted and the mixture is smooth. Pour the ganache into each of the tart cases and chill for 1 hour until the filling is firm. Add blueberries and serve. Yum!!

Baking with Grandma




This weekend just gone my Mum came up to visit. We had such a great weekend, shopping, cooking, eating and celebrating a late Mother's Day as well as both her and my birthday. The absolute highlight of the weekend was Max and his cousin Emmy helping mum make a cake. It was beyond adorable watching the three of them working together, cracking eggs, blending up the limes, mixing it all together. Emmy and Max both took their jobs very seriously and mum managed the whole process with the patience of a saint!

Mum is an amazing baker and the cake was delicious. Perfect parts tangy and sweet. I will definitely be making this one again.

Here's what you need if you want to make it yourself.

375g of Limes (13 ounces)
6 Large Eggs
225g of White Sugar (8 ounces)
250g of Almond Meal (9 ounces)
1 teaspoon gf baking powder

1. Grease and line a 20cm (8inch) spring form tin. Preheat the oven to 190c (375f).

2. Place the limes in a pot of water and boil for 2 hours. Drain, and when cool cut in half and remove the seeds. Blend up the limes, skin and all, in a food processor.

3. In a separate bowl beat the eggs and then add the sugar, almond meal and baking powder, mixing well. Add in the blended limes and mix again.

4. Pour mix into your tin and bake for one hour (you may need to cover with foil after 40 minutes to stop the top from burning).

5. Allow to cool slightly before removing from the tin, then serve warm with fresh cream.

Nigella says that the cake tastes even better the next day, but ours didn't last that long so I have no idea if it's true or not!!

Valentine's Cheesecakes

I'm not really the kind of person that needs a special occasion before I'll make something sinfully delicious, but if I did, Valentine's Day would be it. It's the perfect occasion to make something sweet for someone special.

I first made these cheesecakes for Sean last Valentine's Day, but I completely forgot to share the recipe for them. He loved them so much that I thought I would make them again this year (and actually write a post about them this time!).




No Bake Oreo and Raspberry Cheesecakes

15 Oreo cookies, roughly chopped
225g (8 ounces) cream cheese, at room temperature
¾ cup sugar
1 teaspoon vanilla extract
400ml (13 ounces) fresh cream, whipped (you can use cool whip, but I prefer freshly whipped cream)
1 punnet of raspberries
8 small jars (I used baby food jars and they were perfect)

1. Coarsely chop the cookies and set them aside.

2. Beat the cream cheese, sugar & vanilla with an electric mixer and set aside.

3. Gently stir in 2/3's of the whipped cream and 3/4′s of the chopped cookies.

4. Half fill each of the jars with the cheesecake mixture, add a layer of raspberries and then top with the remaining cheesecake mix.

5. Spoon the left over whipped cream into a piping bag and add a swirl of cream to the top of each jar. Sprinkle with left over oreos.

6. Refrigerate for at least four hours or until firm.
